Prawns with Celery & Lychee

I've always hated celery for some reasons, I never touch them till I saw this recipe by Zurynee from KC. It gave me inspiration to cook this dish as it seems really interesting, & curiosity kills the cat as the saying goes, wanted to know what it tastes like. So I decided to give this a try. Good-derlicious it was! Think this is the only celery dish that I would eat. As mama's home does not have a blender & lilybuds, I got to modify this recipe. Here's the original recipe & my own modified version.

Original Recipe
Ingredients:
400g medium grey prawns
1 clove garlic
3 shallots
1 can of lychee, drain the juice - use fresh lychees if possible.
3-4 celery sticks, sliced thinly
a handful of dried lily bulb, soaked till soft
1/2 chicken bouillon cube or 6 tbsp chicken stock
salt to taste


Method:
1. Blend garlic and shallots till paste
2. Heat oil and fry the garlic/onion paste till fragrant
3. Add chicken stock, lily bulb, celery and prawns. Cook for about 1-2 mins.
4. Lastly add the lychees and salt to taste
5. Simmer till prawns are pink and cooked.

Modified
Ingredients:
400g medium grey prawns
1 clove garlic, minced finely

3 shallots, minced finely
1/2 can of lychee, drain the juice
5 celery sticks, sliced thinly
a pinch of salt
1/4 cup water
2tsp extra virgin olive oil

Method:
1. Heat oil, fry minced garlic & shallots till fragrant.
2. Add prawns & celery. Stir fry for 1 min.
3. Add water. Cook for another 1-2 mins.
4. Lastly add the lychees and salt to taste.
5. Simmer till prawns are pink and cooked.
